Ingredients
- 1 Eggplant
- 2 tablespoons Parmesan cheese
- 1 oz. shredded fat-free mozzarella cheese
- sprinkle of garlic salt
- 2 tablespoons fresh basil
Directions

Cut 1 small eggplant into 4 slices and coat with olive oil nonstick spray. Grill 5 minutes in a nonstick pan over medium-high heat. Flip and sprinkle with Parmesan, mozzarella and garlic salt to taste. Pan grill another 5 minutes or until cheese melts. Top with basil.
