Spinach and Feta Bread Pudding

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 6 large eggs
  • 2 cups milk
  • 3 tablespoons fresh dill
  • 1/2 teaspoon lemon peel
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 10 ounces spinach, squeezed dry
  • 4 ounces feta cheese, cut into 1/2" cubes
  • 8 slices firm bread, cut into pieces

Directions

  1. Preheat oven to 350

  2. In skillet with oven safe handle, melt butter over medium heat.

  3. Add onion and cook until tender

  4. In medium bowl, whisk eggs, milk, dill, lemon peel and salt and pepper

  5. With rubber spatula, stir in onion, spinach and cheese

  6. Gently stir in bread

  7. Pour into skillet and let stand for 15 minutes

  8. Cook over medium heat for 3 minutes without stirring, or until mixture starts to set around the edges.

  9. Place in oven 20-25 minutes or until knife comes out clean

  10. Remove from oven

  11. Let stand 5 minutes, then cut into wedges

  12. Makes 6 servings
