Zucchini Casserole

Ingredients

  • 1 1/4 cups saltine crackers
  • 1/4 cup butter, melted
  • 2 1/2 cups zucchini, grated
  • 1 teaspoon garlic powder
  • 1 cup Velveeta, cubed
  • 1 egg
  • 1 teaspoon minced onion flakes
  • 1/8 teaspoon pepper

Directions

  1. Combine cracker crumbs and butter in bowl

  2. Reserve 1/2 cup

  3. Combine the remainder with zucchini, garlic, cheese, egg, onion flakes and pepper

  4. Mix well and place in casserole

  5. Sprinkle cracker crumbs on top

  6. Bake at 325 for 40 minutes
