Swiss Chicken Cutlets

Ingredients

  • 5 chicken breasts, split and boned
  • Salt to taste
  • 2 eggs, beaten
  • 1 cup Italian bread crumbs
  • 1/4 cup oil
  • 3 tablespoons butter
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 1/2 cups milk
  • 1/2 cup white wine
  • 1 cup Swiss cheese, shredded

Directions

  1. Pound chicken to 1/4 inch between waxed paper

  2. Sprinkle with salt

  3. Dip in egg, then bread crumbs.

  4. Heat oil

  5. Brown for 2 minutes on each side, set aside

  6. In saucepan, melt butter

  7. Blend in flour, salt and pepper

  8. Add milk.

  9. Cook and stir until thick and bubbly

  10. Remove from heat and stir in wine.

  11. Pour half of sauce in bottom of casserole dish

  12. Arrange chicken on top of sauce and top with remaining sauce

  13. Cover and chill for several hours

  14. Baked covered at 350 form 50 minutes or until heated through

  15. Sprinkle with cheese and return to oven for a few minutes
