Espresso Chip Muffins

Ingredients

  • 2 cups unbleached all-purpose flour
  • 1/4 cup instant espresso coffee powder
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup milk
  • 3/4 cup packed light brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Directions

  1. Grease muffin cups with non-stick cooking spray or butter.

  2. In a large mixing bowl, add the flour, espresso coffee powder, baking powder, cinnamon, and salt; stir to combine.

  3. In another bowl, add the milk, brown sugar, melted butter, eggs, and vanilla; whisk until smooth.

  4. Add the liquid ingredients to the dry ingredients; stir just until moistened; do not overmix.

  5. Pour batter evenly into muffin cups.

  6. Sprinkle chocolate chips over each muffin.

  7. Bake at 400 degrees for 20-22 minutes or until pick comes out clean.

  8. Cool on a wire rack before removing from the pan.
