Southwestern Chicken Soup

Ingredients

  • 1/2 lb. boneless skinless chicken breasts, cut into 1/2-inch cubes
  • 1/4 cup chopped onion
  • 2 garlic cloves, minced
  • 2 TBS olive oil
  • 1 can whole kernel corn, drained
  • 1 can black beans, rinsed and drained
  • 1 can chicken broth (14 1/2 oz.)
  • 1 can died tomatoes and green chilies, undrained
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1/8 tsp cayenne pepper
  • Plain yogurt and minced cilantro or parsley for garnish

Directions

  1. Cook chicken, onion, and garlic in olive oil until chicken is lightly browned and cooked through.

  2. Stir in corn, beans, tomatoes and spices.

  3. Bring to a boil. Reduce heat, cover and simmer for 10-15 minutes.

  4. Garish with yogurt and cilantro.
