Olive Cake

Ingredients

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 4 eggs
  • 2/3 cup oil
  • 1 cup dry white wine
  • 1/12 cups pitted green olive, lightly floured
  • 1 1/2 cups cubed ham
  • 6 oz. grated cheese (Gruyere, cheddar)
  • 1/4 tsp pepper

Directions

  1. Mix the flour and baking power. Add eggs and mix thoroughly into a stiff dough.

  2. Add oil and wine and mix until smooth, or as smooth as you can get it with a couple of minutes of mixing.

  3. Stir in the floured olives, ham, cheese and pepper. No need to salt.

  4. Pour into greased pan 12-inch loaf pan and bake at 350 degrees for 55 minutes.
