- 2 large egg yolks
- 2 teaspoons lemon juice
- 2 tablespoons water

Beat egg yolks until smooth in a 2 cup glass cup

Add lemon and beat again.

Add water and beat again

Cover with plastic wrap and microwave on high until yolk begins to move

Cook 8-10 seconds longer and remove

Use a clean fork and beat vigorously until smooth.

Cover and let stand 1 minute
