Edamame Soup

Serves 4 peopleIngredients
- 6 cups chicken broth or 6 cups vegetable broth
- 2 cups shelled edamame beans (fresh cooked or frozen, thawed)
- 1 cup finely sliced white mushroom
- 1 teaspoon grated fresh ginger
- 1 tablespoon soy sauce
- dark sesame oil (a dash)
- 2 tablespoons minced fresh cilantro
- salt
- pepper
Directions

Combine all ingredients in a large saucepan over high heat; stir well.

Bring to a boil; decrease heat to medium; simmer 15 minutes.

Serve in shallow bowls.
