Ingredients
- 100g chopped nuts
- 3 grated carrots
- 3 dl sugar, half brown sugar
- 1 / 2 teaspoon salt
- 2 dl sunflower oil
- 3 medium eggs
- 3 1 / 2 dl flour
- 1 teaspoon baking powder + 1 teaspoon baking soda
- 1 teaspoon cinnamon
- Glaze made of:
- 400 g cream cheese
- 1 1 / 2 dl powdered sugar
- 4 tablespoons lemon juice

Grease and bread cookie cutter. Chop walnuts and grate carrots. Whisk oil, salt and sugar, then stir in one egg at a time, add the walnuts and carrots. Mix flour, baking powder, baking soda and cinnamon and fold it into the batter.

Pour into the pan bake about 40 minutes at 180 degrees.
