Ingredients

  • 100g chopped nuts
  • 3 grated carrots
  • 3 dl sugar, half brown sugar
  • 1 / 2 teaspoon salt
  • 2 dl sunflower oil
  • 3 medium eggs
  • 3 1 / 2 dl flour
  • 1 teaspoon baking powder + 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • Glaze made ​​of:
  • 400 g cream cheese
  • 1 1 / 2 dl powdered sugar
  • 4 tablespoons lemon juice

Directions

  1. Grease and bread cookie cutter. Chop walnuts and grate carrots. Whisk oil, salt and sugar, then stir in one egg at a time, add the walnuts and carrots. Mix flour, baking powder, baking soda and cinnamon and fold it into the batter.

  2. Pour into the pan bake about 40 minutes at 180 degrees.
