Bobby’s Green Onion Potato Salad

Ingredients
- 2 lbs new potatoes, scrubbed
- 5 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1 1/4 cup mayonnaise
- 2 tbsp white wine vinegar
- 1 jalapeno, finely diced
- 6 green onions, green and pale green parts sliced thin
- 1/4 cup chopped fresh cilantro or flat leaf parsley
- Dash of onion powder
- Dash of garlic power
Directions

Place the potatoes in a large saucepan with enough cold water to cover by 2 inches and 1 tbsp of salt. Boil until just cooked. Drain well and let cool a few minutes. Slice into 1/4-inch thick slices.

Whisk the mayonnaise, vinegar, jalapenos, 2 tsp of salt and 1/2 tsp of pepper together in a a large bowl. Add the potatoes, green onion and cilantro and gently fold to combine. Season with onion powder and garlic powder to taste.
