Chocolate Espresso Pudding Cake

Ingredients
- 1 cup flour
- 2/3 cup sugar
- 1/3 cup plus 1 tbs cocoa
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 c water
- 2 tbs vegetable oil
- 1 cup packed light brown sugar
- 1 3/4 cup hot espresso

at oven to 350. Spray 8×8 glass baking dish with nonstick cooking spray. In a medium bowl, whisk flour, sugar, 1/3 cup of cocoa, baking powder and salt. Whisk in water and oil until smooth, then spread in baking dish. Sprinkle with brown sugar and remaining cocoa powder. Slowly pour espresso over batter.

Bake 40 minutes or until toothpick inserted part way down comes out clean. Let stand 30 minutes. Serve warm.
