Ingredients
- For the Pastry:
- 2 cups whole wheat flour
- 1 TBSP organic sugar
- 1 tsp sea salt
- 1 sticks of unsalted butter, cut into 1 inch cubes and very cold
- 1 cup buttermilk
- For the Brown Sugar & Cinnamon Filling: (Whisk together and set aside)
- 1/2 c brown sugar
- 1 1/2 tsp cinnamon
- 4 tsp flour
Directions

Make the Dough:

In your food processor, add the flour, sugar and salt. Pulse once or twice to blend.

Add the cold 1 inch cubed butter pieces and pulse on and off until the mixture resembles little pea-size shapes. Place in a large mixing bowl.

Combine the egg and milk then pour into the flour mixture.

Using a spatula mix everything until just combined then knead on a lightly floured surface.

Cover the dough in plastic wrap and place in the refrigerator for at least 2 hours.

Once the dough has chilled long enough, allow the dough to thaw until it becomes workable and divide the dough in half.

Shape each half into a large rectangle and roll until the dough is about 1/8 inch thick.

On the first rectangle spread your filling of choice leaving 1/2 inch room around the edges.

Now place the second sheet of dough on top and gently press/pinch together the dough on all four sides.

Using a pastry cutter or really sharp knife cut the dough into smaller rectangles, making them as large or small as you wish.

Now wet your fingers with water and press the cut edges together to seal, then press with a fork, to seal again.

Place the tarts on a baking sheet and place in the refrigerator while you heat the oven. Pre-heat the oven to 350 degrees.

Remove the tarts from the refrigerator and prick with a fork several times to A) get the look of a pop-tart and B) to allow steam to escape during cooking so they don’t puff up.

Bake at 350 for 15-20 minutes or until golden brown.

Sprinkle with a little mixture of cinnamon-sugar if you prefer and allow to cool before serving.

If you wish to store these pretty little wonders for a quick breakfast in the mornings then place each tart in a Ziploc bag and store in the freezer. Reheat at 350 for 10 minutes or place in the microwave for 30-45 seconds.
