Butter Bean Salad

Serves 5 people
Ingredients
- 1 15 oz can butter beans (or black beans)
- 1 pint cherry or grape tomatoes, halved
- 1 small red onion, diced
- 1/2 cup diced yellow squash
- 1/2 cup diced zucchini
- 1/4 cup minced fresh cilantro
- optional: 1/2 seedless cucumber, diced
- Dressing:
- 3 T olive oil
- 2 T lemon juice
- 1 tsp. ground cumin
- salt and pepper to taste
Directions

Whisk dressing ingredients together in the bottom of a large bowl. Add remaining ingredients, and toss to coat. Chill.
