Chicken casserole

Can use rotisserie chicken or cook chicken breasts in microwave
Prep time: 10 minutes
Cook time: 30 minutes
Serves 5 people
Ingredients
- 1 rotisserie chicken, cut up, or 3 cups cooked diced chicken
- 1 bay leaf
- 1 can reduced-fat cream-of-mushroom soup
- 1 cup reduced-fat or fat-free sour cream
- 1 8 oz can sliced water chestnuts, drained
- 1/2 cup slivered almonds, optional
- 1 T lemon juice
- salt and pepper
- 1 cup (4 oz) shredded cheddar cheese
- 1 small (2.8 oz) can French's fried onions

Mix all ingredients except for cheese and fried onions. Transfer to a 2 quart round casserole baking dish. Sprinkle with cheese and onions. Bake, uncovered, at 350 degrees for 20-30 minutes. Remove bay leaf.

If cooking chicken breasts instead of using a rotisserie chicken, place 3 large breasts in a 2 qt. dish; cover. Microwave on high for 5 minutes, rearrange chicken, and then cook for about 5 more minutes.
