Ingredients
- 1 cup (loosely packed) fresh cilantro
- 1/2 cup extra virgin olive oil
- 1/2 cup pumpkin seeds
- 1/4 cup cotija cheese
- 1 glove garlic
- 1 tsp freshly squeezed lime juice
- 1 tsp sherry vinegar
- 1 tsp honey
- 1 tsp kosher salt

In a food processor, combine cilantro, olive oil, pumpkin seeds, cotija cheese, garlic, lime juice, vinegar, honey and salt. Pulse until well-mixed with a pesto consistency. Set aside.
