Cake Doughnuts

Ingredients

  • 1/4 cup + 2 TBSP almond milk
  • 1/2 tsp apple cider vinegar
  • 3 TBSP soy yogurt
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup + 1 TBSP canola oil
  • 3/4 cup sugar
  • 3/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 1/2 cups cake flour

Directions

  1. Combine almond milk and cider vinegar in a bowl – set aside

  2. Mix yogurt, egg yolks, vanilla extract and oil – set aside

  3. In separate bowl, sift together flour, sugar, baking powder, nutmeg and salt

  4. Create a well in the center of dry ingredients and pour in wet ingredients – stir until all ingredients are incorporated.

  5. Mist doughnut pan with oil

  6. Fill each doughnut well 1/2-3/4 full with batter

  7. Rap pan on counter to ensure batter is evenly spread in each well

  8. Bake at 375 for 10-14 minutes
