Butterscotch Bars

Ingredients

  • 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 350F. Lightly grease an 8×8-inch square pan.

  2. In a small bowl, whisk together flour, baking powder and salt.

  3. In a small saucepan, melt the butter and brown sugar together, stirring until brown sugar is dissolved. Remove from heat and transfer to a medium mixing bowl. Allow to cool for about 5 minutes. Whisk in egg and vanilla extract, followed by the flour mixture. Stir in pecans. Pour batter into prepared pan and spread evenly.

  4. Bake for 22-25 minutes, until bars are golden brown and have started to pull away from the edges of the pan slightly.

  5. Let bars cool in pan before slicing.
