Fresh Peach Cake

Ingredients

  • 1/2 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups mashed fresh peaches
  • 1/2 cup chopped pecans
  • sweetened whipped cream

Directions

  1. In a mixing bowl, add the oil and sugar; beat well to combine.

  2. Add the eggs, one at a time, beating after each addition.

  3. In another bowl, add the flour, baking soda, salt, and cinnamon; stir to mix.

  4. Gradually add the flour mixture to the creamed mixture, stirring just until blended.

  5. Fold in peaches and nuts.

  6. Spoon batter into a greased and floured 13×9 inch baking pan.

  7. Bake at 325° for 40-45 minutes or until a wooden pick comes out clean.

  8. Cut into squares and top with whipped cream.
