Ingredients
- SHRIMP TACOS-
- 2-4 tbsp. olive oil
- 1 garlic clove, chopped
- 1/2 tsp. ground cumin
- pinch red pepper flakes
- 1 pound med. shrimp,devined
- 3 tsp. dried chipotle powder
- 2-3 tsp cilantro, chopped
- tortillas-whole wheat
- SPICY BLACK BEANS-
- in a sauce pan over med. heat add chopped onion and garlic cloves about 2 mins. add cumin and blk beans. stir add pepper flakes. 5 mins.
- MANGO-PINEAPPLE SALSA-
- peel and dice mango, put in bowl chop yellow and red bell peppers add to bowl add onion and drained pineapple squeeze lime juice over and toss. add cilantro and salt.

large skillet, med. heat add olive oil and chopped garlic-cook 1 min. add cumin and red pepper flakes let blend add shrimp and toss carefully add tquila and flambe season with salt and add chipotle powder. add cilantro and toss. heat tortilla plate and serve.
