Ingredients
- 3 tablespoons olive oil
- 1 small onion, chopped
- 1/4 pound fresh mushrooms, sliced
- 1/4 cup red bell pepper, chopped
- 1 clove garlic, minced
- 1/2 pound cooked sausage
- 1/2 pound fresh spinach chopped
- 1/4 cup Swiss cheese, shredded
- salt and pepper
- 4 sheets Phyllo dough
- 1/4 cup butter
- 3 tablespoons bread crumbs
Directions
- Preheat oven to 375

Heat oil in skillet

Add onion, mushrooms, pepper and garlic

Cook and stir until vegetables are soft

Stir in sausage, spinach and cheese

Salt and pepper to taste

Set aside to cool

Place 1 Phyllo sheet on work surface

Brush with melted butter and sprinkle 1/4 of the bread crumbs on top

Repeat layers 3 times

Spread sausage mixture on top

Roll up, starting at short side, until log forms

Place on baking sheet

Brush with remaining butter

Bake for 15 minutes or until golden brown

Let stand 5 minutes before cutting

Cut into 1" slices

Serve hot
