Ingredients
- 2 carrots
- 2 onions
- 2 stalks celery
- 2 potatoes
- 1 cup oil
- salt and pepper
- water
- raw fish
- Caroline rice
- eggs
- rice
Directions

Boil all of the vegetables until tender.

add the fish and boil for 1/2 hour, or until fish turns white

Put fish and veggies in a platter

Strain soup, bring to a boil

Add rice and boil until tender

Make avgolemono sauce and add slowly back into soup

To make avgolemono, beat egg whites, add egg yolks and stir in lemon juice

Add a little hot liquid slowly to bring the egg mixture to the same temperature as the soup.

Slowly pour back into pot, stirring constantly
