Applesauce Oat Streusel Muffins

Ingredients
- Muffin:
- 2 Cups All-Purpose Flour
- 2/3 Cup Granulated Sugar
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
- 1 Teaspoon Baking Powder
- 1 Cup Cinnamon Applesauce
- 1/2 Cup Canola Oil
- 2 Eggs, beaten
- 1 Teaspoon Vanilla Extract
- Streusel:
- 1/2 Cup Old Fashioned Oats
- 6 Tablespoons All-Purpose Flour
- 1/2 Cup Brown Sugar
- 1 Teaspoon Ground Cinnamon
- 4 Tablespoons Butter, semi-soft
Directions

In a large bowl, combine flour, sugar, baking soda, baking powder and salt.

In a separate bowl, whisk together your eggs, oil, applesauce and vanilla; mix well.

Pour applesauce mixture into the dry ingredients and mix until thoroughly combined.

Scoop batter into a prepared muffin tin about 3/4 way full.

In one bowl, combine all streusel ingredients with a fork until combined. Mixture should be crumbly. Sprinkle over muffin batter before baking.

Bake in a pre-heated 350 degree oven for 20-25 minutes or until toothpick inserted in center comes out clean.
