Ingredients

  • 2 (4 oz) spicy turkey sausages
  • 4 large eggs
  • 1/4 cup nonfat milk
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp sour cream
  • 1/2 cup pico de gallo
  • 1 ripe avocado
  • 2 tbsp pico de gallo, to garnish
  • 1 tbsp sour cream, to garnish
  • 1 avocado, sliced, to garnish

Directions

  1. Dice turkey sausage and cook in a preheated skillet until brown, approx 2-3 minutes.

  2. While sausage browns, whisk 4 eggs with milk.

  3. Pour eggs on top of the turkey sausage in hot skillet and scramble.

  4. Add shredded cheddar while scrambling eggs and sausage.

  5. Cook up to 3 minutes depending on how you and your guest prefer eggs.

  6. Serve on a warmed plate and garnish with 1 tbsp sour cream, 2 tbsp pico de gallo and diced avocado.
