Chile Egg Bake

Ingredients
- 10 eggs
- 4 oz shredded mild cheddar
- 4 oz shredded monterey jack
- 1/2 c. all purpose flour
- 16 oz cottage cheese
- 1 4oz can diced green chiles (drained)
- 1 tsp. salt
- 6 tbs. unsalted butter melted
- 2 tsp. onion powder

e heat oven to 350. Mist a 13×9 pan with cooking spray. In a large bowl with electric mixer beat eggs until pale yellow and doubled in volume. Toss cheddar and jack cheese with flour, then add to eggs. Add in remaining ingredients and beat just until combined.

Pour into dish and bake 35-40 min or until center is firm.
