Honey Pecan Salmon

Serves 4 people

Ingredients

  • 1/4 cup extra virgin olive oil
  • 3 TBSP honey
  • 4 salmon filets (4 to 6 ounces each)
  • 1 1/2 cups well-chopped pecans
  • 1/2 TBSP dried parsley
  • salt and pepper, to taste
  • additional honey

Directions

  1. Preheat oven to 425 degrees.

  2. Mix olive oil with 3 TBSP honey in med. bowl.

  3. Dip each filet in honey/oil mixture.

  4. Then roll & press in pecans.

  5. Place in greased (Pam) 9×13-inch baking dish.

  6. Sprinkle with parsley.

  7. Salt & pepper, to taste.

  8. Drizzle a bit more honey over each filet.

  9. Bake for 10 to 15 minutes, til fish flakes with a fork.

  10. Serve on top of white rice.
