Honey Pecan Salmon

Ingredients
- 1/4 cup extra virgin olive oil
- 3 TBSP honey
- 4 salmon filets (4 to 6 ounces each)
- 1 1/2 cups well-chopped pecans
- 1/2 TBSP dried parsley
- salt and pepper, to taste
- additional honey
Directions

Preheat oven to 425 degrees.

Mix olive oil with 3 TBSP honey in med. bowl.

Dip each filet in honey/oil mixture.

Then roll & press in pecans.

Place in greased (Pam) 9×13-inch baking dish.

Sprinkle with parsley.

Salt & pepper, to taste.

Drizzle a bit more honey over each filet.

Bake for 10 to 15 minutes, til fish flakes with a fork.

Serve on top of white rice.
