Beef and Mushroom Bake

Ingredients
- 1 lb lean ground beef
- 2 TBSP margarine
- 1/2 lb sliced mushrooms
- 1 medium sized onion, chopped
- 20 oz. frozen, chopped spinach, thawed & squeezed dry
- 1 cup light sour cream
- 1/2 tsp each: dry oregano, basil, & thyme
- 1/4 tsp pepper
- 1/8 tsp nutmeg
- 1 cup (4 oz) shredded sharp Cheddar cheese
- 1 cup (about 5 oz) grated parmesan cheese
Directions

Crumble beef in 7×11 inch microwave safe baking dish(glass).

Micro, uncovered, on high for 5 to 7 min., til no longer pink.

Drain & remove meat from dish; set aside.

Place margarine in same dish used for microwaving beef.

Microwave on high, uncovered, for 35 seconds (til melted).

Stir in mushrooms & onion; cover withplastic wrap.

Micro, on high, 4 minutes, stirring after 2 min.

Stir in beef, spinach, sour cream, spices, 1/2 cup Cheddar cheese, & 1/2 cup parmesan.

Sprinkle remaining cheeses on top.

Micro, uncovered, on high for 7 to 8 minutes (turn after 4 min. if needed).

Let stand, cooked, for 5 minutes.
