Ingredients
- 1 1/2 to 2 lbs ground beef (I use 2 lbs)
- 1/2 cup chopped onion
- 8 oz. tomato sauce
- 1 pkg. taco seasoning mix
- 28 oz can diced tomatoes with juice
- 14 oz can kidney beans with juice
- 17 oz can whole kernel corn with liquid
- 1 to 2 cups water (depends how thick you want it) (I use 2 cups)
- Salt and pepper to taste (I often leave the salt out)
- 1 cup grated cheddar cheese
Directions

Brown beef with onions. Cook until onions are tender. Drain fat. Add tomato sauce, taco seasoning mix, tomatoes, kidney beans, corn, water, salt, and pepper. Simmer 15 to 30 minutes. Ladle into bowls. Top with cheese. Eat with taco chips (I use the baked scoops and then you almost don’t need a spoon!).
