Potato Cheese Soup

Ingredients

  • 4 cups sliced potatoes
  • 2 cups water or vegetable stock
  • 2 tsp salt
  • 1 small onion sliced
  • 1 TBSP oil
  • 1 TBSP dried parsley
  • 3 cups milk
  • 1 cup shredded cheddar cheese
  • 2 TBSP margarine
  • 1 tsp salt
  • 1/4 tsp pepper
  • Pinch of garlic powder

Directions

  1. Cook potatoes in water with salt until tender. Reserve cooking water. Sauté onion in oil until soft. Place some of the potatoes, potato water, onion and parsley in a blender and puree with blender no more than half full until the potatoes are smooth. Return potato mixture to pot and add milk. Stirring continuously, add cheese, margarine and seasoning. Heat until cheese is melted and soup is hot, but do not boil. Ladle up!
