Ingredients
- Shell
- 1/2 c. water
- 1/4 c. butter
- 1/2 c. all purpose flour
- 2 eggs
- Vanilla filling
- 1 1/4 c. cold fat free milk
- 1/4 tsp. vanilla extract
- 1 package sugar free vanilla instant pudding
- 1 c. fat free whipped topping
- Chocolate Frosting

In a large saucepan bring water and butter to a boil. Add flour all at once stirring until a smooth ball forms. Remove from heat, let stand 5 minutes. Add eggs one at a time beating well after each addition. Beat until smooth and shiny. Transfer to a sealable plastic bag.

Cut a 1 in hole in one corner. Pipe eight 3 1/2 in logs onto an ungreased baking sheet. Bake at 450 for 10 minutes. Reduce heat to 400 and bake 15-20 minutes or until golden brown. Transfer to a wire rack. Cut a slit in the top to let steam escape. Cool. Split and set tops aside. Discard soft dough inside

Mix milk vanillaand pudding for 2 min with electric mixer. Let stand 2 minutes then fold in whipped topping. Spoon into eclairs and frost tops with frosting.
