Skillet Tacos

Ingredients

  • 1/4 lb lean ground turkey
  • 2 TBSP chopped onion
  • 2 TBSP chopped green pepper
  • 1 can (8 oz) tomato sauce
  • 1/2 cup uncooked elbow macaroni
  • 1/2 cup water
  • 1/4 cup picante sauce
  • 2 TBSP shredded fat-free cheddar cheese
  • 1/4 cup crushed baked tortilla chip scoops
  • 1/4 cup chopped avocado
  • Iceberg lettuce wdges and fat-free sour cream, optional

Directions

  1. In a large nonstick skillet coated with cooking spray, cook the turkey, onion & green pepper over medium heat until no longer pink.

  2. Stir in the tomato sauce, macaroni, water & picante sauce.

  3. Bring to a boil.

  4. Reduce heat; cover & simmer for 10-15 minutes or til macaroni is tender.

  5. Divide between two plates; top with cheese, tortilla chips & avocado.

  6. Serve with lettuce and sour cream.
