Chipotle Salmon w/ Strawberry Mango Salsa

1 salmon fillet with 1/2 cup salsa = 368 calories, 18 grams fat
Could also grill in a grill pan inside or broil in oven

Ingredients
- 2 TBSP brown sugar
- 3 cloves garlic, minced
- 2 tsp finely chopped chipotle peppers in adobo sauce
- 1/4 tsp salt
- 4 salmon fillets (6 oz each)
- Salsa:
- 2 cups chopped fresh strawberries
- 2/3 cup chopped peeled mango
- 1/3 cup chopped red onion
- 2 TBSP lime juice
- 1 TBSP minced fresh cilantro (or parsley)
- 1 TBSP minced fresh mint
- 2 tsp olive oil
Directions

In a small bowl, combine the brown sugar, garlic, chipotle peppers & salt.

Rub over salmon.

Moisten a paper towel with cooking oil.

Using long-handled tongs, lightly coat the grill rack.

Place salmon skin side down on grill rack (or pan).

Grill salmon, covered, over high heat (or broil 3-4 inches from the heat) for 5-10 minutes or til fish flakes easily with a fork.

In a small bowl, combine remaining ingredients; serve with salmon.
