Roasted Pepper Salad

Cook time: 25 minutes
Serves 6 people

Ingredients

  • 2 cups cherry tomatoes, halved
  • 1/2 cup minced fresh basil
  • 8 garlic cloves, minced
  • 1 TBSP balsamic vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 large sweet yellow peppers, halved & seeded
  • 2 TBSP shredded Parmesan cheese

Directions

  1. In small bowl, combine the tomatoes, basil, garlic, vinegar, salt & pepper.

  2. Spoon 1/3 cup into each pepper half.

  3. Transfer to a 13×9 inch baking dish coated with cooking spray (Pam).

  4. Cover (foil) & bake at 400 degrees for 20 minutes.

  5. Uncover; sprinkle with cheese.

  6. Bake 5-10 minutes longer til the cheese is melted.
