Ingredients
- Coarse salt
- 4 pounds baby Yukon Gold potatoes
- 2 1/2 oz (5 TBSP) unsalted butter, melted
- 1/4 cup plus 1 TBSP chopped chives, for sprinkling
- Freshly ground pepper
Directions

Bring large pot of water to a boil.

Add 3 TBSP salt, stirring to dissolve.

Pierce each potato 3 times with a skewer (or meat fork).

Add to water and return water to a boil.

Reduce heat to simmer til tender, about 20 minutes.

Drain, and return potatoes to the pot.

Set over low heat, shaking pan often, for 2 minutes to dry out; then let cool.

Peel the potatoes & cut into 1 inch pieces.

Transfer to a bowl & stir in butter.

Sprinkle with chives & season with salt & pepper.
