Buttered New Potatoes

Serves 8 people

Ingredients

  • Coarse salt
  • 4 pounds baby Yukon Gold potatoes
  • 2 1/2 oz (5 TBSP) unsalted butter, melted
  • 1/4 cup plus 1 TBSP chopped chives, for sprinkling
  • Freshly ground pepper

Directions

  1. Bring large pot of water to a boil.

  2. Add 3 TBSP salt, stirring to dissolve.

  3. Pierce each potato 3 times with a skewer (or meat fork).

  4. Add to water and return water to a boil.

  5. Reduce heat to simmer til tender, about 20 minutes.

  6. Drain, and return potatoes to the pot.

  7. Set over low heat, shaking pan often, for 2 minutes to dry out; then let cool.

  8. Peel the potatoes & cut into 1 inch pieces.

  9. Transfer to a bowl & stir in butter.

  10. Sprinkle with chives & season with salt & pepper.
