Saute 1 onion in oil

Add 1 1/2 pounds ground beef and brown completely

Cut the tops off of the peppers, dice and add to beef.

Use filling from tomatoes or 1/2 can whole tomatoes

Add salt, pepper and a handful of rice

Cook about 5-10 minutes in fry pan

Add a little wine
-
Remove from heat

Add 1 tablespoon fresh parsley, 2 cloves of garlic, chopped and some mint (fresh or dry)

Fill the vegetables
-
Sprinkle with bread crumbs and grated cheese

Place cut up potatoes around the vegetables

Pour tomato sauce diluted in water over top

Add salt, pepper and olive oil

Bake at 350 until vegetables are done and tender
