Stuffed Peppers and tomatoes

Ingredients

Directions

  1. Saute 1 onion in oil

  2. Add 1 1/2 pounds ground beef and brown completely

  3. Cut the tops off of the peppers, dice and add to beef.

  4. Use filling from tomatoes or 1/2 can whole tomatoes

  5. Add salt, pepper and a handful of rice

  6. Cook about 5-10 minutes in fry pan

  7. Add a little wine

  8. Remove from heat

  9. Add 1 tablespoon fresh parsley, 2 cloves of garlic, chopped and some mint (fresh or dry)

  10. Fill the vegetables

  11. Sprinkle with bread crumbs and grated cheese

  12. Place cut up potatoes around the vegetables

  13. Pour tomato sauce diluted in water over top

  14. Add salt, pepper and olive oil

  15. Bake at 350 until vegetables are done and tender
