Avgolemono Soup

(from beckyinem’s recipe box)

Ingredients

  • 4 cups water
  • 2 large spoon fulls beef or chicken base
  • 2 hand fulls Carolina rice
  • Lemon juice (to taste)
  • 3 eggs (beaten separately)
  • Salt and pepper

Directions

  1. Heat water with base to boiling
  2. Add rice and boil until rice is tender

  3. Add salt and pepper to taste

  4. Prepare avgolemono sauce

  5. Beat egg whites and set aside

  6. Beat egg yolks and add lemon juice (to taste)

  7. Fold in egg whites

  8. Remove soup from heat and add a little of the soup to the avgolemono mixture

  9. When it is equal in temperature to the soup in the pot, gradually add it back into the pot

  10. Serve immediately
