Oatmeal Cookie Pancakes

Ingredients

  • 1 cup rolled oats
  • 2/3 cup all purpose flour
  • 1/3 cup whole wheat flour
  • 1/3 cup finely chopped pecans
  • 1 TBSP sugar
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 2 TBSP. canola oil
  • 1 egg
  • 1 cup vanilla soy milk

Directions

  1. Chop pecans finely. Combine in a mixing bowl with oats, flour, sugar, baking powder, and cinnamon.

  2. Add vanilla, oil, egg, and milk. Mix well. (Batter should be somewhat thick)

  3. Spoon onto a hot, greased griddle or skillet. Flip when the edges begin to dry. Serve with warm maple syrup.
