Ingredients
- 1 cup rolled oats
- 2/3 cup all purpose flour
- 1/3 cup whole wheat flour
- 1/3 cup finely chopped pecans
- 1 TBSP sugar
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 2 TBSP. canola oil
- 1 egg
- 1 cup vanilla soy milk
Directions

Chop pecans finely. Combine in a mixing bowl with oats, flour, sugar, baking powder, and cinnamon.

Add vanilla, oil, egg, and milk. Mix well. (Batter should be somewhat thick)

Spoon onto a hot, greased griddle or skillet. Flip when the edges begin to dry. Serve with warm maple syrup.
