Pancakes From Scratch

Ingredients
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoon butter, melted
- 1 tablespoon corn oil, plus more as needed
- Butter
- Maple Syrup
Directions

Combine the flour, sugar, baking powder and salt in a large bowl.

Add the milk, egg, and melted butter and mix until combined.

Heat the oil in a large frying pan, or griddle over medium high heat.

After the oil has heated for 1 minute, flick a drop of water into the pan. If it immediately sizzles, it’s time to cook the pancakes.

Using about 1/4 cup batter per pancake, pour 1-3 pancakes into the pan. Cook about 2 minutes, or until the bubbles that appear on the surface or the pancakes begin to break. After 1 minute, lift the edge of 1 pancake to make sure the bottom isn’t getting too brown. If it is, reduce the hear to medium.

Flip the pancakes over with a spatula and cook them for 1 more minute. The second side will not get as uniformly brown.

Serve with butter and syrup. You shouldn’t need additional oil in the pan, but if the batter starts to stick, add 1 more tablespoon of oil to the pan.
