Stir-Fried Beef and Peppers

Ingredients
- 1 pound lean feef, cut into paper-thin strips
- 3 tablespoons soy sauce
- 1 tablespoon lemon juice
- 5 teaspoons cornstarch
- 1/4 teaspoon sugar
- 1/8 teaspoon ground ginger
- 1/2 cup oil
- 1/2 pound mushrooms, thickly sliced
- 1 med. onion, quarted
- 2 small green bell peppers,cut in squares or strips
- 1/2 teaspoon salt
- 1 can beef broth
- cooked rice
Directions

Combine soy sauce, lemon juice, cornstarch, sugar, and ginger. Add beef strips and stir, let stand while preparing vegetables.
- Heat oil in large frying pan. Stir fry mushrooms, onion and green peppers and salt, until vegetables are crisp tender (about 5 minutes). Lift vegetables from the oil and set aside.
- Stir-fry meat mixture in hot oil until it loses its pink color. Add beef broth until thickens and then add vegetables and stir until hot. Serve with cooked rice.
