Quick Lemon Pound Cake

Ingredients

  • 1 1/4 cup flour
  • 1 1/2 cups sugar
  • 1 tablespoon baking powder
  • 1 cup plain, lemon or vanilla yogurt
  • 3 eggs
  • 1-2 tablespoons lemon juice

Directions

  1. Preheat oven to 350. Spray an 8 or 9 inch round or square baking pan with cooking spray

  2. In medium bowl, place flour, sugar and baking powder and whisk

  3. Add the yogurt and lemon juice and allow to sit for a minute or so

  4. Then add the eggs and whisk until everything is incorporated

  5. Pour batter into pan and bake for 25-30 minutes or until a light golden top

  6. The finished cake will be a bit sticky.
