Chilli & Garlic Tuscan Cabbage

Tuscan Cabbage is a variety of kale
This aromatic addition to cabbage gives chargrilled beef and mashed potato a real zing!

Ingredients
- 2 bunches Tuscan cabbage, halved crossways
- 4cm piece fresh ginger
- 1 small fresh red chilli, seeds removed, finely chopped
- 2 garlic cloves, crushed
- 1 1/2 tbsp olive oil
- 2 tbsp water
- Salt and pepper
Directions
- Heat half the oil in a large wok or frying pan over high heat.
- Add half the cabbage and cook, tossing, for 1-2 minutes or until cabbage starts to wilt slightly.
- Remove from the wok.
- Heat the remaining oil and add the ginger, chilli, garlic and remaining cabbage.
- Cook for 2 minutes or until cabbage starts to wilt.
- Add all cabbage back to the wok with the water. Toss to combine.
- Cover and cook for 2 minutes or until cabbage wilts.
- Season well.
- Serve with chargrilled beef and mashed potato.
