Vegetable hotpot with bacon

Ingredients

  • 2 large potatoes peeled and sliced
  • 2 carrots
  • 1 large onion
  • 8 oz can of baked beans (or spicy beans)
  • 1/2 pt hot water (or stock?)
  • Small level teaspoon of marmite
  • 4 rashers of smoked streaky bacon
  • 1 -2 oz grated cheese

Directions

  1. Cook onions and bacon until brown.

  2. In a casserole dish, put half the potatoes and layer other veg and bacon on top. Add baked beans, rest of pots and seasoning.

  3. Mix marmite with water (or stock?). Cover with lid and cook 210c for 1-2 hours. Then sprinkle with cheese and allow to melt before serving.
