Nutty Vegetable Loaf

Ingredients
- 3 T vegetable oil
- 2 cups onion, finely chopped
- 4 eggs, slightly beaten
- 2 t. lemon juice
- 1 t. salt
- 1 tsp chervil leaves, crushed
- 1/4 tsp tarragon leaves, crushed
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
- 2 cups celery, finely chopped
- 2 cups carrots, grated
- 1 cup green pepper, finely chopped
- 1 cup peanuts, finely chopped
- 1 cup wheat germ
- 1 cup bread crumbs, fine
- 1 cup cheddar cheese, grated
- 1 8 oz can Tomato sauce

PREHEAT oven to 350

SAUTE onion in large skillet until tender.

COMBINE eggs, lemon juice and seasonings in a large bowl. Stir well to blend.

Add onion and all remaining ingredients except tomato sauce. Mix well.

PRESS mixture into well-greased 9×5×3 loaf pan.

BAKE for 55-60 minutes until knife inserted in center comes out clean.

LET STAND 10-15 minutes before removing from pan. Serve hot or cold with tomato sauce, if desired.
