Ingredients
- 1 medium carrot
- 1 medium onion
- 1 medium celery stalk
- 15 ounces Ricotta cheese
- 8 oz mozzarella cheese
- 2 tablespoons oil
- 3/4 pound ground beef
- 3 1/2 ounces plum tomatoes
- 8 ounces tomato sauce
- 1/2 teaspoon sugar
- 16 oz rigatoni
Directions

Heat oven to 375

Chop vegetables
-
Slice mozzarella
-
Heat oil and cook vegetables
-
Add beef and cook until brown

Add tomatoes, sauce, sugar and salt

Heat till boiling and simmer for 5 minutes

Prepare rigatoni and return to pot

Reserve 1 1/2 cup sauce

Stir sauce into rigatoni and pour into 4 quart baking dish

Place 1/2 ricotta over rigatoni by spoon fulls

Bake 30-35 minutes

Top with remaining sauce and mozzarella
