Ham and Scalloped Potatoes

Ingredients

  • 6 medium potatoes, peeled and sliced (preferably russets)
  • 1/2 cup finely chopped green onion
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lb cooked ham (thinly sliced or diced)
  • 1 (12 ounce) can evaporated milk
  • 1/2 cup heavy cream milk
  • 1 tablespoon butter, cut up

Directions

  1. Preheat oven to 325°; coat a shallow 2-quart casserole with cooking spray.

  2. Layer half of the potatoes in the baking dish, and sprinkle with the green onions, 1 tablespoon flour, 1/4 teaspoon salt, and 1/4 teaspoon pepper.

  3. Top with the ham in one layer, and cover with the remaining potatoes.

  4. Sprinkle with the remaining flour, salt, and pepper.

  5. Mix the evaporated milk and cream together; pour evenly over the casserole; dot with the butter.

  6. Coat a sheet of foil with nonstick cooking spray; cover the casserole and bake for 1 hour.

  7. Uncover and continue baking 30 minutes to 1 hour, or until the potatoes are cooked and the top is lightly browned.
