Apple-Buttered Sweet Potatoes

Ingredients
- 3 lbs sweet potatoes, peeled and cut into 1-inch pieces (about 8 cups)
- 2 medium granny smith apples, cored and cut into wedges (may use other tart cooking apple)
- 1/2 cup dried cherries or 1/2 cup dried cranberries
- 1 cup whipping cream
- 1 cup apple butter
- 1 1/2 teaspoons pumpkin pie spice
Directions

In a 3 1/2 to 4 quart slow cooker, combine the sweet potatoes, apples, and dried cherries.
- In a bowl, combine cream, apple butter, and pumpkin pie spice.
- Pour cream mixture over mixture in cooker; stir gently to combine.
- Cover and cook on LOW for 6-7 hours or on HIGH for 3-3 1/2 hours.
