Scalloped Potatoes

Ingredients

  • 8 medium potatoes
  • small jar pimiento, chopped
  • 5 green onions, sliced
  • 1 stick butter
  • 1/4 cup flour
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 3/4 cup milk
  • 3/4 cup cheddar cheese, grated

Directions

  1. Boil potatoes in skins. Let cool to room temperature.

  2. Peel and grate potatoes. Put in large mixing bowl.

  3. Preheat oven to 350 degrees.

  4. Melt butter in pot until bubbly. Add flour, salt and pepper. Gradually add milk, stirring constantly, until sauce thickens. Remove from heat.

  5. Stir onions and pimientos into sauce.

  6. Pour sauce mixture over potatoes and mix well.

  7. Put potato mixture into 9 × 13 pan.

  8. Top with grated cheddar cheese.

  9. Bake for about 1 hour, until hot and bubbly
