Endive Points with Apple Orange Salsa

Ingredients
- 2 heads Belgian endive, washed and separated
- 1 apple, diced with skin on
- 1 orange, small dice (can substitute strawberries)
- 2 Tbsp red onion, minced
- 2Tbsp crumbled blue cheese
- dash of lemon juice
Directions

Combine together in a small bowl the apple, orange and onion using a bit of lemon juice to prevent darkening of apples.

Prepare endive points and spread in a fan on a serving platter

Just before filling add blue cheese to apple mixture and put a small amount of salsa on the end of each endive
