Grilled Zucchini and Summer Squash Salad

Serves 6 peopleIngredients
- 4 med zucchini, trimmed, halved lengthwise
- 4 med yellow crookneck squash, trimmed halved lengthwise
- 5 tbsp olive oil
- 1/2 cup chopped fresh basil
- 1/3 cup freshly grated Parmesan cheese
- 2 tbsp balsamic vinegar
Directions

Brush veggies with 3 tbsp oil, sprinkle with salt and pepper and grill until tender and brown, turning occasionally, about 10 minutes. Cool. Cut into 1 inch wide pieces.

Add basil, cheese, vinegar and remaining 2 tbsp oil and toss to blend. Season with salt and pepper.
