Ingredients
- 2 puonhds watermelon
- 1 garlic clove
- 1/2 oz red onion
- 3 oz cucumber, skin and seeds removed, chopped
- 1/2 red pepper, chopped
- 1 oz day-old crusty bread
- 1/3 cup Pinot Noir verjus
- 1 - 2 T freshly squeezed lime juice
- 1/2 c extra-virgin olive oil
- kosher salt to taste
- 3 - 4 large mint leaves for garnish
Directions

Add all the ingredients except olive oil in a blender. Puree until smooth. slowly drizzle in the olive oil and season with salt. Serve weel chilled and garnish with mint.
